Corner: Bier and your health
Bier and the Liver
Alcohol consumption, of course, affects not
only the cardiovascular system, but other
organs of the body as well. Obviously, the
liver, which is the organ that reduces blood
alcohol, is the one that needs to be
considered carefully in any discussion of
the physiological effects of alcohol. There
is no doubt that the liver can become
damaged permanently if an individual abuses
alcohol. The damage that excessive alcohol
consumption can do to the liver is called
cirrhosis of the liver. But how does the
liver deal with moderate amounts of alcohol?
Medical science has determined that an
effective way to answer this question is to
measure the amount of gamma-glutamyl
transpeptidase (GGT) in a person’s body. GGT
is an enzyme that plays an important role in
regulating oxidative processes in the body.
Because GGT levels can go up or down with
the demands a person’s alcohol intake puts
on the liver, we can rephrase the question
about healthy versus unhealthy alcohol
consumption by asking how much alcohol can a
person consume without triggering a
significant increase in GGT-values. To come
to grips with this question, medical science
has developed an intricate mathematical
model based on clinical studies. The model
takes several factors into account.
Importantly, it shows that GGT-values are
affected not just by the absolute amount of
alcohol in our drinks but also by its
relative concentration. The differences are
particularly noticeable when the effects on
the body of standard hard liquors, such as
brandy, gin, scotch, rum, or vodka, are
compared with those of light beers.
For the average male, the consumption
threshold before a significant rise in GGT-levels
is 26.3 grams (0.93 ounces avoirdupois) of
pure alcohol per day from hard liquor. To
put this into perspective, 0.93 U.S. ounces
by weight of pure alcohol amount to 1.2 U.S.
fluid ounces, or about 35 milliliters.
Assuming a standard 40% alcohol content by
volume in hard liquor, the GGT-threshold is
exceeded once a person drinks more than
about 3 fluid ounces (roughly 90
milliliters) of hard liquor per day.
These same studies also showed, however,
that the average male has a much higher GGT-threshold
if he consumes all of his alcohol in the
form of light beer instead of 40% hard
liquor. The light beer drinker can absorb 41
grams (almost 1.5 ounces avoirdupois or
approximately 1.8 U.S. fluid ounces) of
alcohol per day without triggering an
increase in GGT-values. Thus, the average
male can replace 3 ounces of vodka, for
instance, with 56.25 fluid ounces (almost
1.7 liters) of light beer at an alcohol
content by volume of 3.2%. Translated into
commercial-size containers, he can drink 4.7
standard U.S. 12-ounce (0.355-liter) bottles
of beer per day without causing his liver
any harm ... a quantity that happily also
falls into the range (40 grams or about 1.7
U.S. fluid ounces of beer-derived alcohol
per day) at which alcohol consumption has
beneficial effects on cardiovascular health.
