In Bavaria, people meet after work with their friends in
the Bier
Garten or the Gasthaus and talk about the day's events.
Of course they drink their favorite beer and like a
snack to munch on before dinner. These snacks are
specially priced to go with

Poached veal and pork sausage with herbs,

Every region of Germany has another name for this
dish - and you will find people all over Germany eating
these in bars and in "Gaststaetten", at work, while
watching a soccer game, during break at school or for a
snack while hiking in the mountains, use your fingers or
knife and fork, order them hot or cold. Just dip them in
mustard and enjoy! It's just plain good German soul
food. Here we are following my mother's recipe: we mix
ground beef and ham with eggs, lots of onions, bread,
milk and our secret spices - after rolling these
"sausage patties" in coarse bread crumbs they are slowly
sauteed to a nice dark rich brown. $.95

Spicy Goulash Soup with beef, pork and peppers. Cup $

is made from 56 herbs, roots,
and spices, contrary to the rumor, none of
which is elk blood. Once all of the 56
ingredients are measured and ground,
they are reduced to macerates or extracts by
being steeped in a mixture of cold water and
alcohol for two to three days. After the
resulting extract has been filtered, it is
stored in oak barrels for a period of not
less than one year. At the end of this
storage time, the extract is filtered once
more, mixed with liquid sugar, caramel,
alcohol, and water, and filtered yet again.
The resultant brew is then ready for
bottling and best enjoyed chilled.

We will have 3 different Hofbrau Biers from Munich,
Bavaria on tab, entertainment from the “Kleine
Blasmusik” brass band,
the Texanische Schuhplattler,
the Bavarian Folk Dance group will perform,
our
"King Ludwig" will play his accordion and Mrs. Judy
Jackson is chairing the Silent Auction, The monies
raised here and with the live auction will benefit
"My Friends House" in Plano and the Collin County
Assistance Center.
We have expanded on your food choices beyond the
Brats with potato salad and sauerkraut, with a
Bavarian Oxen Roast, a whole steamship round of beef
and another Bavarian treat will be waiting for you –
we will bake some giant ham hocks so they are juicy
inside and have that crunchy crust.
